I know the idea of a summer stew is a little weird, but I live in England so we normally only get a few sunny days anyway. This recipe is a summer one because it's filling enough to get you through a rainy afternoon but light enough not to leave you stuffed. It is also delicious!
1) Bring a large saucepan of water to the boil, add the basmati rice and cook for 10-12 minutes, at which point the rice should have absorbed most of the water (any extra can be drained off).
2) Pour the tin of chopped tomatoes, red pesto and chilli powder into a saucepan and bring to the boil, then simmer for around 5 minutes.

Cooking time- 10 mins
1 tin chopped tomatoes
1 tin kidney beans
1 tin butter beans
150g basmati rice
1 tablespoon red pesto
A pinch of chilli powder
Chopped red pepper and / or rocket to garnish
