Spicy tofu with rice noodles

This was one of my saviour dishes over exam time this year, as it can be made very quickly and is completely delicious.

PS We didn't have any broccoli when I was taking pictures so you'll have to use your imagination for that!
* I prefer to use smoked tofu or egg tofu (both available in Chinese supermarkets) as they don't require pressing before frying. If you have silken tofu, that works too but you will have to press it before cooking using this method:

-Take around 10 sheets of kitchen roll, and place the first one onto a chopping board.
​-Place the tofu on top of this and then
SERVES 1
Preparation time - 10 mins
Cooking time- 10 mins


INGREDIENTS
100g rice noodles
1/3 can butter beans
2 teaspoons of harissa
100g tofu *
1 tablespoon red pesto
A pinch of chilli powder
OPTIONAL:
Chopped red pepper and / or rocket to garnish
