These roasted veggies are amazing! Seriously, I had to refrain from writing 'best ever' in the title... but luckily for you I managed not you. Quick and easy is always the way to go - and especially if you have a dancer's schedule. It can be prepped the night before and is only made with store cupboard ingredients. Enjoy!
Serves 3-4 as a side Preparation time - 5 minutes Cooking time - 45 minutes
Ingredient: 1 courgette 1 red / yellow pepper 1 large handful cherry tomatoes 2 carrots 1 tablespoon honey Splash of vinegar
Method: 1)Preheat the oven to 200°C or 392 °F.
2) Chop up the courgette, carrots and pepper into small slices (when I'm feeling lazy, I do this with the largest setting on my mandoline). Chop the tomatoes in half.
3) Place all the vegetables on a baking tray. Pour over the honey and vinegar and stir so that all the vegetables are covered. Season with salt and pepper.
4) Cook the vegetables for 45 minutes. Serve with couscous for a light lunch, or as a side dish.
