Chorizo and giant couscous
Serves 2 Preparation time - 5 mins Cooking time - 5 mins
150g giant couscous
3/4 cm long piece of chorizo
Large handful of rocket
1) Bring a pan of water to the boil. Add the giant couscous and then bring down to medium heat. This needs to cook for 6-8 minutes.
2) Meanwhile, chop the chorizo into small slices, and then again into semi-circles (bite size chunks basically.)
3) In a frying pan, heat a splash of oil until sizzling. Add the chorizo until it is browned on all sides and a bit crispy.
4) When the giant couscous is ready it will be soft but not mushy, a bit like pasta al dente. Drain and serve with the chorizo and the oil. Mix in the rocket.
